  • Seasoned beef

    • 93/7 ground beef
      450 g1 lb
    • tomato paste
      7 ga spoonful
    • salt
      7 ga spoonful
    • cumin
      3 ga sprinkle
    • smoked paprika
      3 ga sprinkle
    • cayenne pepper
      2 ga sprinkle
  • Yogurt sauce

    • yogurt
      , non-fat, plain
      50 g3 parts
    • green chile sauce
      15 g1 part
    • lime juice
      a drizzle
  • Bowl components

    • tortilla chips
      ~10for serving
    • monterrey jack cheese
      30 ga handful
    • red onions
      , diced
    • pickled jalapeños
      , diced
    • romaine lettuce
      , chopped

Method

Step 1: Brown the beef

In a pan, add the ground beef, salt, and spices. Use a wooden spoon or potato masher to break up the beef as it cooks over medium-high heat. Once the beef is well , add in the tomato paste along with a splash of water and mix until the beef is glazed.

Step 2: Make the sauce

In a small bow, mix together yogurt, green chile sauce, and lime juice until homogenous and desired spice/acidity is reached.

Step 3: Assemble the bowl

Chop the veggies to your desired size, and grate the cheese. To assemble, add the lettuce as a base, then follow with 1/3 of the beef, grated cheese, pickled jalapeños, red onion, and the green chile yogurt sauce. Mix it all up and then eat it with a serving tortilla chips.
