Roasted Peppers
Perfect to throw on any dish & help make new ones.
I’ve been eating these nonstop the past few weeks as a topping or creating sauces. It’s a really simple process that can be done with any pepper.

Ingredients
Peppers
- red bell peppers3
- yellow bell peppers3
- cooking oil
- salt
Seasoning
- saltto taste
- vinegar
- garlic
- dried herbs
- flavored oils
Method
Step 1: Chop the peppers
Preheat the oven to 425° F/218°C. Chop the peppers in half then remove the seeds and membrane.
Step 2: Roast in the oven
Line a baking sheet with parchment paper. Place the halved peppers on the sheet, drizzle with oil, and sprinkle with salt. in the oven until completely soft and the skin is slightly blackened, about 15 minutes.
Step 3: Steam & slices the peppers
Remove the roasted peppers from the oven and place them in a bowl. Cover with plastic wrap and let them for 15 minutes. Remove the outer skin, then slice or chop into the desired shape.
Step 4: Season & enjoy
Taste them! Add a sprinkle of salt, vinegar, garlic, or herbs as you see fit. Mix in the seasonings and store in an airtight container.
- You can fill the container partway with oil if you would like, but I prefer not to.
Use as a topping or blend into sauces, hummus, etc.
