Step 2: Season & sear the chicken

Set a cast iron over medium high heat.

Then, season the chicken: set the boneless chicken thigh on a plate and add a sprinkle of salt on both sides to ensure even coverage. Add the mayo and seasonings to the chicken and rub it all over.

Add the chicken to the hot pan and let it up on each side. it until it reaches 160°F/71°C. Let it rest a few minutes before slicing it up.
