Leftover Focaccia Turkey Pesto Sandwich

One of my favorite things to do with leftover focaccia. Make the sandwich your own by dialing in the amount of each filliing to your preference.

Ingredients

  • Sandwich components

    • focaccia
      , halved
      1 square
    • sliced turkey
      a few slices
    • provolone
      a slice
    • arugula
      a handful
    • tomatoes
      , thinly sliced
      1/2
    • mayonnaise
      a spoonful
    • pesto
      a spoonful
    • pickled onions
      a spoonful

Method

Step 1: Toast the bread, turkey, & cheese

To prep the bread, cut the focaccia square in half like a 'bun' into 2 thin pieces.

Heat a pan over medium heat. Place the 2 pieces of focaccia cut side down to crisp up, then set aside.

Add the sliced turkey to the pan to heat up gently then add the provolone cheese over top of the turkey to melt.

  • Meanwhile, gather the rest of your sandwich ingredients.

Step 2: Add the fillings & finish toasting

Keep the pan on medium heat while you assemble the sandwich.

Add a layer of pesto & mayo to both pieces of bread. Then, place the lettuce down followed by the pickled onions and tomatoes. Place the turkey and cheese over top with a little more lettuce over top.

Add the top piece of bread over to close, then place back on the pan. Lightly weigh down the assembled sandwich with another pan or spatula to crisp the bottom piece and warm everything through.

Step 3: Serve

Slice the toasted sandwich diagonally into two triangles. Enjoy.
