Homemade Big Mac

Straight up, the Big Mac we ordered from McDonald’s had these super thin and dry patties that didn’t even taste like beef. This homemade version takes 15 minutes and actually tastes like beef!

Ingredients

  • Single Big Mac components

    • 85/15 ground beef
      200 g
    • pickles
      6
    • american cheese
      2 slices
    • sesame seed bun
      1.5
    • salt
    • lettuce
    • onions
      , finely diced
      a spoonful
  • Big Mac sauce

    • mayonnaise
      30 g
    • ketchup
      20 g
    • dijon mustard
      10 g
    • pickles
      , diced
      2-3
    • smoked paprika
      a sprinkle
    • onion powder
      a sprinkle
    • black pepper
      a sprinkle

Method

Step 1: Prep the sauce & patties

Set a bowl on a scale and add all the ingredients. Mix together and taste. Adjust the salt and other ingredients as needed.

Form the ground beef into two evenly-sized balls and sprinkle with salt.

Step 2: Sear the patties

Set a cast iron or carbon steel pan over medium-high heat.

Once hot, drop one of the meat balls in and immediately smash it with a flat metal spatula. Do the same with the other ball of meat. Let the burgers for 60 to 90 seconds to develop a crust. Scrape the burgers and flip them over to cook the other side for another 60 to 90 seconds.

Step 3: Assemble & serve

Gather the bun, lettuce, cheese, pickles, and diced onion.

To assemble, add the sauce to the bottom bun, followed by the pickles, onion, and lettuce. Place the burger patty on top with the cheese and more sauce. Add the middle bun, more Big Mac sauce, onion, lettuce, burger patty, cheese, and top bun with more sauce. Enjoy!
