Crispy Bacon & Scallion Potato Pancakes

This recipe was designed to make use of leftover mashed potatoes from holiday meals. With a few extra pantry ingredients, you can turn leftover mash potatoes & bacon bits into a whole new weeknight meal in under 10 minutes.

Pancake components
- mashed potatoes400 g
- eggs1
- panko bread crumbs30 g
- bacon bits30 g
- scallions30 g
- cheese, grated30 g
- saltto taste
- black pepperto taste
- buttera spoonful
- cooking oila spoonful
For garnish
- sour cream
- scallions
- bacon bits
Method
Step 1: Combine ingredients
Combine mashed potatoes, bacon bits, egg, scallions, cheese, salt, and pepper in a bowl and mix well.
Pour the breadcrumbs into a separate small bowl.
Step 2: Shape & coat the potatoes
Shape the potato mixture into 3-inch patties and then dip them into the breadcrumbs until evenly coated.
Step 3: Fry the pancakes & serve
Heat oil and butter in a nonstick skillet over medium heat and the potato pancakes on both sides until they are heated through and , approximately 4 minutes on each side.
Serve with sour cream, scallions, and more bacon bits.
