Cheesy Chicken Flatbread

A cheesy and satisfying 15-minute lunch.

In a good way, these remind me of cheesy chicken snack items you'd find at East Coast fast food stops like Sheetz and Wawa.

At home, you can dial up the protein and customize the flavors & sauces.

Ingredients

  • Cumin crusted chicken

    • chicken thighs
      , boneless
      1-2
    • salt
      a sprinkle
    • cumin
      a sprinkle
    • cooking oil
      as needed
  • Wrap & cheese components

    • lavash bread
      1-2
    • cheddar
      , grated
      two handfuls
  • Dipping sauce

    • hot sauce
      to taste
    • greek yogurt
      to taste

Method

Step 1: Season & sear the chicken thighs

Preheat a griddle or pan over medium-high heat.

Meanwhile, generously season all sides of the chicken with salt. Add an even sprinkle of cumin seeds to one side.

When the pan is hot, add a drizzle of oil, then lay the chicken thighs cumin side down to and develop color.

  • Leave them undisturbed for a few minutes. Use this time to clean or gather remaining ingredients.

Step 2: Flip the chicken & make the dipping sauce

Once the thighs have developed browning on the bottom, flip them, revealing their cumin-seed crust.

  • Continue the chicken on the other side to finish cooking. Remove from the pan once it reaches an internal temp of 175°F/80°C.

Meanwhile, make the sauce: mix yogurt and hot sauce until smooth. Taste and adjust as desired.

Step 3: Assemble the flatbreads

Lower the heat on the pan or griddle. Add the flatbreads and cover with an even layer of grated cheese. Allow them to warm through.

  • Meanwhile, slice the chicken into thin strips.

Once the cheese begins to melt, add the chicken to the flatbread, and then fold each over like a quesadilla.

Once they are lightly and everything is melty, remove them from the heat.

Step 4: Slice & serve

Slice the flatbreads on a diagonal to make triangular pieces. Serve with the dipping sauce.
