Oregano Crusted Chicken Thighs

One of my favorite ways to cook chicken is to coat it in a spice and sear it to form a crust. It’ a great way to use up spices, especially ones you might not otherwise use up like oregano, which tastes great with this technique.

Ingredients

  • Seasoned chicken thighs

    • chicken thighs
      , boneless, skinless
      2250 g
    • salt
      2g1% by weight
    • dried oregano
      enough to coat
  • Cooking oil

    • neutral oil
      , or spray
      10 gfor searing

Method

Step 1: Prep & season the chicken

Take each chicken thigh, trim off any excess fat, then thin as needed with a knife (butterfly or even out thick spots).

Sprinkle with salt evenly on all sides, then add a generous coating of dried oregano. Press the chicken into the dried oregano until it clings to all sides in a uniform layer.

Step 2: Sear the chicken

Preheat a pan or griddle over high heat, ideally making sure the surface temp of the pan reaches about 400°F/200°C.

Add the oil and swirl to coat the pan evenly, then lay each seasoned chicken piece onto the hot cooking surface to .

After a few minutes, the chicken will release from that side when it has and a crust has formed. Flip the chicken to finish cooking it through.

Step 3: Finish, then serve or store

Keep an eye on the heat as the chicken and develops a crust on the second side. Some of the excess oregano will inevitably burn, but the seasoning on the meat should stay in good shape.

When the second side releases and the chicken is fully cooked (thighs should reach at least 175°F/80°C), remove from the heat.

Rest for a few minutes before slicing or storing in an airtight container.
