Jamaican Jerk Chicken Stew
Super filling & easy to make.
This jerk chicken inspired stew is the perfect thing to make ahead and reheat on cold winter nights.

Ingredients
Aromatic paste
- garlic, chopped2-3 cloves
- shallots, chopped2
- habanero peppers, chopped2
- fresh ginger, chopped1” knob
- allspice, grounda spoonful10 g
- curry powdera spoonful10 g
Chicken & vegetables
- chicken thighs, cubed900 g~ 2 lbs
- yukon gold potatoes, cubed450 g~ 1 lb
- green peas160 g~ 1/3 lb
- cooking oil2 spoonfuls30 g
Braising components
- coconut milk400 g14 oz can
- chicken bouillon powdera sprinkle
- wateras needed
- vinegara drizzle
- dark soy saucea drizzle
For serving
- toasted coconut powder
- scallions
- limes
Method
Step 1: Blend the aromatic paste
Chop up the aromatics and toss them in a blender or food processor. Pulse until the aromatics are finely diced.
Pulse in the allspice and curry powder with the aromatics to finish the paste
Step 2: Sear the chicken
Salt the chopped chicken. Once salted, add the aromatics to the chicken, coating it evenly.
Add the oil to a dutch oven or heavy bottomed skillet over high heat.

- It’s okay if it’s not fully cooked through, it will continue to cook as the soup in a later step.
Step 3: Simmer the soup
Return all of the seared chicken to the pot along with the coconut milk to the bottom of the pot.
Fill the coconut milk can with water twice and add that to the pot, ensuring everything is mostly covered. Add a drizzle of vinegar and soy sauce.
Bring to a for 20-30 minutes.
Step 4: Add the potatoes & finish simmering
Toss in all of the potatoes and allow the soup to for another 15-20 minutes or until the potatoes have softened.
Step 5: Add the peas & serve
Once the potatoes have softened, add the peas. Cook for a minute or so until the peas are warmed through.
Taste and adjust the seasoning as needed (with more vinegar, soy sauce, or spices as needed)
Serve with whatever garnishes you have on hand. Coconut powder is a great way to add a kick of sweetness and aroma.
