Step 1: Mix the chorizo
Homemade chorizo
- ground pork450 g1 lb
- salt6 g1.5%
- paprikaa spoonful
- dried oreganoa spoonful
- black peppera spoonful
- nutmega sprinkle
- garlic, minced5-8 cloves
In a large bowl, mix together all chorizo ingredients until well combined. Set aside for cooking.
- If you won’t be making multiple portion now and want to save extra for later, flatten the sausage mix into ziplock freezer bags. Before freezing, press perforation lines into the flattened sausage so you can break off smaller amounts at a time.
- You can cook a serving of sausage straight from frozen, as demonstrated in the video!
If you cook all of the meat right now, you should have enough for 4-6 sandwiches.
