Step 2: Sear the patties

Set a cast iron or carbon steel pan over medium-high heat.
Once hot, drop one of the meat balls in and immediately smash it with a flat metal spatula. Do the same with the other ball of meat. Let the burgers for 60 to 90 seconds to develop a crust. Scrape the burgers and flip them over to cook the other side for another 60 to 90 seconds.
