  • Kofta beef

    • ground beef
      , 93/7
      450 g1 lb
    • yellow onion
      , minced
      75 g1/8th
    • parsley
      , minced
      a handful
    • cumin
      5 ga spoonful
    • ground coriander
      2 ga sprinkle
    • allspice
      , crushed
      2 berriesa sprinkle
    • salt
      4 g1%
  • Yellow rice

    • basmati rice
      250 g1 part
    • water
      350 g1.4 parts
    • chicken bouillon powder
      a spoonful
    • aleppo pepper
      a pinch
    • turmeric powder
      a pinch
    • whole cloves
      2
  • Dill yogurt sauce

    • greek yogurt
      150 g3 parts
    • mayonnaise
      50 g1 part
    • dried dill
      5 ga spoonful
    • granulated garlic
      5 ga spoonful
    • black pepper
      3 gor to taste
    • pickle juice
      , or vinegar
      a splash
  • Bowl toppings (to taste)

    • lettuce
      , shredded
    • tomato puree
      , chopped
    • feta
      , crumbled
    • pickled onions

Method

Step 1: Cook the yellow rice

Add the rice, water, bouillon powder, turmeric, whole clove, and aleppo pepper to a rice cooker or saucepan. Stir to combine.

Fluff with a fork before serving.

Step 2: Brown the beef

Meanwhile, heat a large skillet over medium-high heat until hot. Add the ground beef, salt, onion, parsley, and spices.

As it , break it into small crumbles until it is well and cooked through.

Remove from the heat and set aside.

Step 3: Mix the yogurt sauce

Combine the Greek yogurt, mayo, a splash of pickle juice, dried dill, garlic, and black pepper, stirring until smooth. If needed, thin with an extra splash of water or pickle juice.

Taste and adjust seasoning if needed.

Step 4: Assemble the bowls

Prep the toppings: shred the lettuce, dice the tomatoes, crumble the feta, and have the pickled onions ready.

Divide the yellow rice among bowls or meal prep containers. Top with the kofta beef, lettuce, tomatoes, pickled onions, and feta. Finish with a generous spoonful of the dill yogurt sauce.
