Ginger Beef & Broccoli

Weeknight stir-fry to serve over rice.

This is an easy stir fry dish to make when you’ve got some leftover rice you don’t know what to do with. The ginger & garlic come through the thin slices of beef and broccoli for some really good flavor.

Ingredients

  • Beef & broccoli

    • steak of choice
      450 g1 lb
    • garlic
      2 cloves
    • broccoli
      1 head
    • fresh ginger
      1 inch knob
    • salt
      a sprinkle
    • cooking oil
      two spoonfuls30 g
    • thai chili flakes
    • soy sauce
  • For serving

    • white rice
    • pickled onions
    • black sesame seeds
    • thai chili flakes

Method

Step 1: Prepare the steak & rice

Place the steak in the freezer for 1-2 hours before cooking. Meanwhile, cook some rice now if you don’t have any leftover.

Step 2: Slice the steak & make the sauce

Once the steak has firmed up in the freezer, slice it as thin as possible and place it in a bowl.

Grate the garlic cloves and ginger using a grater. Add them to the bowl with chili flakes, a splash of soy sauce, and half of the oil. Mix everything together with your hands.

Chop the broccoli into pieces for stir-frying.

Step 3: Stir fry the beef

Pour the remaining oil into a wok and set it over high heat. Once it starts to smoke, add the seasoned beef and for 1-2 minutes until cooked through. Remove and set aside.

Add a little soy sauce and water to the wok. Scrape the fond from the bottom of the pan, then add the broccoli. Let it cook until the water evaporates, then set aside. The broccoli should still be slightly crunchy.

Step 4: Serve & enjoy

To serve, place rice on the plate and sprinkle with sesame seeds. Add the broccoli, then the beef, some pickled onions, and finally another sprinkle of chili flakes. Enjoy!
