Fish en Papillote

Step 1: Prepare the parchment paper

  • 2 parts fish

    • cod
      ~ 170 g1 fillet
  • 1 part vegetables

    • green beans
      , thinly sliced
      ~ 85 g
  • Aromatics

    • citrus slices
      to taste
    • herbs
      to taste
    • garlic
      to taste
    • scallions
      to taste
  • Poaching components

    • broth
      , or white wine
      a splash
    • salt
      a sprinkle

Cut parchment paper into a large circle.

Place vegetables, aromatics, and a filet on one half of the parchment. Sprinkle with salt.

Fold the parchment over and seal the edges to create a package. Add cooking liquid before sealing completely.

Repeat for remaining servings.
