Dirty Rice
Easy and hearty dinner to have in your weeknight arsenal.

Go ahead and prep a bunch of frozen Cajun trinity (equal parts bell pepper, onion, and celery) so you can make this dirty rice recipe on the fly. It’s an easy and hearty dinner to have in your weeknight arsenal.

Ingredients
1 part protein
- ground pork454 g1 lb
1 part rice
- long grain rice454 g
1/2 part Cajun trinity
- bell peppers~ 75 g
- onions~ 75 g
- celery~ 75 g
2 parts liquid
- chicken broth, or water480 g
Cajun seasoning
- paprikaa sprinkle
- cayenne peppera sprinkle
- fresh oreganoa sprinkle
- garlic powdera sprinkle
- salta sprinkle
- black peppera sprinkle
Method
Step 1: Brown the meat
Set a cast iron pan over medium heat.
Add the ground meat to the pan and until mostly cooked through. As it , break it up into fine bits with a wooden spoon.
Step 2: Add the aromatics & seasonings
Add the trinity of aromatic vegetables and the Cajun seasonings. until the aromatics have softened and the spices are fragrant.
Taste and adjust. It should be heavily flavored since the rice will absorb most of the seasoning.
Step 3: Add the broth & simmer
Add the rice and broth, and stir everything together.
Cover the pan and for ~20 minutes or until the rice has absorbed all the liquid. Enjoy.
