Once the thighs have developed browning on the bottom, flip them, revealing their cumin-seed crust.
- Continue the chicken on the other side to finish cooking. Remove from the pan once it reaches an internal temp of 175°F/80°C.
Meanwhile, make the sauce: mix yogurt and hot sauce until smooth. Taste and adjust as desired.
