Braised Beef Frito Pie
A home twist on the tailgate classic.
Frito pie is usually a chili served over a bag of Frito chips with garnishes. I wanted to make a higher-protein, quick version using up leftover braised beef and mixing that with a sauce and extra spices. If you don’t have braised meat, you could brown some ground beef as a substitute.

Ingredients
Quick chili
- enchilada sauce400 g14oz can
- braised beef, leftover2-3 portions
- garlic powdera spoonful
- smoked paprikaa sprinkle
Fritos & garnishes
- frito corn chips1 bag
- colby jack cheese, gratedto taste
- white onions, dicedto taste
- cilantro, mincedto taste
- sour creamto taste
- hot sauceto taste
Method
Step 1: Make the quick chili
Add the can of enchilada sauce to a saucepan and set to medium heat. Taste and adjust the sauce with garlic powder, smoked paprika, and any other seasonings you see fit.
Bring to a and add the braised beef. Let that warm through and until the meat is fully incorporated and the chili mixture has reached your desired consistency. Taste and adjust as needed.
Step 2: Assemble the Frito pies
In serving bowls, layer in a portion of Fritos and grated cheese. Top with the warmed chili braised meat, then garnish with diced onion, cilantro, sour cream, and hot sauce as desired.
- Alternatively, serve the chili and garnishes right in the Frito bag.
