This type of ground beef & rice bowl is a go-to weekday meal for me, and this recipe makes some leftovers plus extra sauce I can take into other meals during the week.

  • Seasoned beef

    • ground beef

  • Yellow rice

    • white rice
      180 g1 part
    • water
      250 g1.4 parts
    • chicken bouillon powder
      5 g
    • dried oregano
      1 g
    • garlic
      1 g
    • garlic

  • Dill yogurt sauce

    • low-fat sour cream
      150 g3 parts
    • mayonnaise
      50 g1 part
    • water
      50 g1 part
    • dried dill
      4 ga spoonful
    • vinegar
      a splashto taste
  • Topping

    • pickled onions
    • cilantro
      , chopped

Method

Step 1: Cook the yellow rice

Add the rice, water, bouillon powder, oregano, turmeric, and crushed garlic clove to a rice cooker or saucepan. Stir to combine. Cook using your preferred method:

  • with the rice cooker or on the stovetop covered until the rice is cooked through and the water is absorbed.

Fluff with a fork before serving.

Step 2: Brown the beef

Meanwhile, heat a large skillet over medium-high heat until hot. Add the ground beef, salt, Aleppo pepper, and granulated garlic.

As it sears, break it into small crumbles until it is well and cooked through.

Remove from the heat and set aside.

Step 3: Mix the dill sauce

Combine the sour cream, mayonnaise, water, dried dill, and a splash of vinegar, stirring until smooth.

Taste and adjust with more vinegar for extra tang, or a bit more water to thin it out.

Step 4: Assemble the bowls

Prep the toppings: chop the cilantro and have the pickled onions ready.

Divide the yellow rice among bowls or meal prep containers. Top with the seasoned beef, pickled onions, and cilantro. Finish with a generous spoonful of the dill sauce.
