- spaghetti225 g1/2 lb
- extra virgin olive oil60 g
- garlic, thinly sliced3-6 cloves
- red pepper flakesto taste
- parsley, finely choppedsmall handful
Method
Step 1: Boil the spaghetti
Bring a pot of water to . Add a large sprinkle of salt.
Boil the spaghetti until al dente.
- Reserve a bit of pasta water before draining.
Step 2: Sauté the aromatics
Add the oil to the skillet.
the sliced garlic until golden brown, then add the red pepper flakes & them for a few seconds.
Step 3: Emulsify & serve
Add the cooked pasted to the pan, and toss with a few drizzles of pasta water until the oil forms a light and clings to the noodles.
Sprinkle with chopped parsley and serve warm. Enjoy!
