For pig-in-a-blanket style kolaches: Roll out your dough so that you can place a 3-inch piece of sausage and any other toppings on it, then wrap the dough around them so that the meat, cheese, and toppings are completely enclosed. It should resemble a sealed pig-in-a-blanket in a cylindrical, uniform shape.
For round, stuffed kolaches: Roll out a portion of dough and add your desired fillings. Close and wrap the dough around the fillings to form a ball shape. Flip it and place the seam side down.
Once your savory kolaches are stuffed and shaped, brush them with egg wash and sprinkle with grated cheese or sesame seeds.
