Step 2: Prepare the sauce
The sauce
- tomatoes, assorted & ripe454 g1 lb
- olive oil45 g
- fresh basil, torn10 leaves
- fresh thyme, choppeda spoonful
- fresh oregano, choppeda spoonful
- black peppera sprinkle
- saltto taste
Meanwhile, chop the tomatoes into small pieces and add them to the bowl where you will be serving the pasta. Sprinkle some salt over the tomatoes, add the oregano and thyme, and mix everything together.
- If you can't find a fresh version of these, dried works well here since they'll rehydrate in the sauce.
Add the olive oil to a small pan and set it over medium heat.
After a few minutes of salting time, pour off the excess liquid from the tomatoes. Add the torn basil leaves and a few sprinkles of black pepper.
Remove the oil from the heat as soon as it starts to smoke. Pour the hot olive oil over the ingredients to their flavors, then mix thoroughly.
