Step 4: Shape the rolls & proof again

Once the dough has risen and doubled in size take it out and divide it into 8, ~70 gram pieces.
Form them into a ball by tightening and pulling on them on the work surface (see video for additional shaping options).
Place on a greased baking sheet and cover. Let rise until doubled in size, another 60 to 90 minutes.
