Step 3: Prep the sauce & aromatics

  • Noodle sauce

    • soy sauce
      60 g3 parts
    • oyster sauce
      20 g1 part
    • chinese black vinegar
      20 g1 part
    • salt
      3 ga sprinkle
    • fresh ginger
      , minced
      a small knob
  • Vegetables & aromatics

    • scallions
      , thinly sliced
      1 stalk
    • chinese celery
      , diced
      1/2 stalk
    • chinese chives
      , thinly sliced
      1-2
    • garlic
      , minced
      2-4 cloves

While the dough rests, do some prep work.

In a bowl or container, mix together all noodle sauce ingredients until well combined. Cover and set aside.

Chop or gather any remaining vegetables or aromatics. Set aside.
